Sofrito rescue


Last night's picadillo spent the night in the fridge, but still lacked "tomato authority" and tasted almost like ground beef mixed with zesty salad dressing.

This morning I gradually added 2 ounces of tomato paste (after realizing I'd forgotten to include it in the sofrito) while simmering and re-heating.

There, that looks more like it.  (Notice no capers or raisins this time around.)
